Ingredients:
Plantains
Shrimp
Olives
Olive oil
Roasted red pepper
Onion
Cilantro
Pretty simple. Doesn't necessarily need to be put onto the plantains, it can stand alone as a side dish with any meal, but this is the way Maria and I like it. Man I LOVE food...what shall I make for dinner tonight?...hmmm.........
On another note...it's 70 degrees here today...WHAT'S UP WITH THAT? I am not feeling this weather, I'm in Hawaii wearing jackets and using blankets for the baby. I hate rainy season! I'm very ready for the blazing sun to hit.
